Dessert

Cinnamon Peach Crisp

  • 3 cups diced peaches (use fresh or frozen peaches)
  • 1/2 cup Brown Sugar
  • 1/2 cup flour
  • 1/2 cup oatmeal
  • 1-1/2 tsp cinnamon
  • 1/4 cup butter (softened)

Dice peaches into bite size pieces
Place peaches into bottom of baking dish
Combine brown sugar, flour, oatmeal and cinnamon in bowl
Add butter and mix until ingredients are combined
Cover peaches with dry mixture
Cook in 350 oven for 20 to 30 minutes until peaches are hot and topping is crispy
Serve warm with whipped cream or ice cream

Smoothie

Pineapple Peach Smoothie

  • 1/4 cup diced fresh pineapple
  • 1/2 cup diced fresh or frozen peaches
  • 1/2 cup low cal apple juice
  • 1/2 cup low fat plain yogurt
  • 1/2 tsp Stevia sweetener
  • 1 tsp protein powder (optional)
  • 1/2 cup ice

Combine all ingredients in blender and blend until smooth.

Grilled Chicken

Grilled Chicken with Jalapeno Peach Salsa

  • 4 peaches, diced
  • Juice of 2 limes
  • 2 tsp honey
  • 3 tbl red pepper, diced
  • 2 tbl jalapeno, diced
  • 1 tbl cilantro, chopped
  • 1 tsp garlic, chopped
  • 2 tbl red onion, diced

Grill boneless chicken breasts until just cooked (temp 160 degrees)
Combine all other ingredients in bowl and allow to sit in refrigerator for at least 2 hours
When chicken is cooked, top with Peach salsa and serve immediately

Salad

Peach and Blueberry Spinach Salad

  • 1 peach, sliced
  • 1/4 cup fresh blueberries
  • 1 cup baby spinach
  • 3 Tbl red onion, diced
  • 3 Tbl red pepper, diced
  • 1/8 cup white wine vinegar
  • 1 Tbl peach preserves
  • 1 tsp lemon juice

Add vinegar, peach preserves, and lemon juice in small bowl and stir with fork until combined
Mix other ingredients into a salad and top with dressing
Serve immediately
